There’s something about rum that captivates me, especially when it finds its natural home in the vibrant and enticing realm of tiki cocktails. But, alas, rum is often misunderstood in the United States, which has led to many small distilleries producing rums that barely meet the aesthetic standards of proper rum, despite technically qualifying as such. Thankfully, Louisiana’s very own Bayou Rum is breaking the mold and reviving traditional rum production right here within our borders.
The problem with many American rums, whether they are aged or “white,” is that they are often designed to imitate the smoothest and least offensive profiles that a distillery can produce. This means high-proof distillation on column stills, effectively stripping away the spirit’s flavor. What remains is a spirit that resembles vodka, albeit made from sugar cane molasses and legally classified as rum. It is a neutral, unassuming spirit that lacks any distinct flavor profile. Sure, it mixes well with Coke, but it doesn’t leave a lasting impression. Bayou Rum, however, takes a different approach.
For nearly a decade, Bayou Rum has been dedicated to creating the most flavorful rums possible, exclusively using sugar cane grown in the United States. This is a rarity, given that our country’s sugar cane production, much of which is unsuitable for growing cane, does not even rank in the top 10 sugar-producing nations worldwide. Bayou Rum also exclusively distills its rums in copper pot stills, a crucial distinction. These stills produce a spirit that distillers and spirits enthusiasts refer to as “heavier,” with more delicate flavor compounds, known as congeners, present in the final product. It may be a less efficient method, but it preserves the unique flavor of Louisiana sugar cane.
Now, let’s dive into the core lineup of Bayou Rum and appreciate the flavors they offer. All four expressions come in at 40% ABV (80 proof).
Bayou White Rum (MSRP: $22) is an unaged pot still white rum that allows the estery character to shine in a delicate manner. It is perfectly suited for classic cocktails like the daiquiri or mojito. Do we really need another cask-finished whiskey? It seems like every time we turn around, there’s a new one on the market. But despite the oversaturation, there are still some gems to be found. And B.R. Distilling Company’s Blue Note Special Reserve is one of them.
This Memphis-based producer has put together a blend of bourbons that have been finished in not one, not two, but six different types of casks. It may sound like a recipe for disaster, but somehow they managed to get it just right.
The Blue Note Special Reserve is a limited release of just 2,100 bottles. It’s made from three different mashbills, two of which are high rye, and sourced from distilleries in Kentucky and Tennessee. The bourbons range in age from four to 19 years old.
Each of the straight bourbons is individually finished in a different type of cask before being blended together with one unfinished bourbon. The breakdown is as follows: 19-year-old bourbon finished in Cognac casks, 17-year-old bourbon finished in new American oak barrels, 12-year-old bourbon finished in sherry casks, 11-year-old bourbon finished in port casks, five-year-old bourbon finished in madeira casks, and four-year-old bourbon finished in vino de naranja casks. The unfinished bourbon is also four years old.
All of these whiskeys were blended together in similar percentages, except for the white oak barrel finish, which is only at three percent. The result is a harmonious combination of flavors that complement each other perfectly.
The whiskey itself has a beautiful dark amber color, and the nose is filled with honey notes. Despite its cask strength of 112.5 proof, it’s not overpowering. When you take a sip, you’ll taste deep, dark chocolate, hints of orange zest, coconut, vanilla fudge, spiced apple, mulled cider, and toasted almond and grain notes. It’s a complex and flavorful whiskey that showcases the best of each cask finish.
Now, you may be wondering if we really need a blend of seven different whiskeys with six cask finishes. The answer is no, we don’t. But we’re glad it exists, because it’s a prime example of a cask finish done right. Not all cask-finished whiskeys are created equal, but this one is certainly a winner.
The Blue Note Special Reserve is currently available, but only in states where B.R. Distilling Company has distribution. And be prepared to shell out a bit more than your average bottle of whiskey. Barrio Tacos + Tequila + Whiskey, a popular franchise known for its delicious tacos and extensive whiskey selection, will be opening a new location in downtown Kalamazoo, Michigan. The restaurant/bar will be occupying the main floor of the former Charter One Bank building at 215 E. Michigan Ave., which has been vacant since 2011. The opening is scheduled for late 2023.
The Cleveland-based franchise already has successful locations in East Lansing, Traverse City, and Grand Rapids, with the latter having opened just last year. Kalamazoo will be the 20th location for the franchise, which has been operating for 11 years and has restaurants in seven states. Jake Hawley, the owner and operator of all Barrio’s Michigan locations, expressed excitement about being part of the bustling city center of downtown Kalamazoo.
The space that Barrio will occupy is approximately 5,650 square feet, and plans are underway to renovate and utilize the rest of the building. It is estimated that the redevelopment project will cost around $4 million. The project partners include Eckert Wordell Architecture, CSM Group, Construction Simplified, and the city of Kalamazoo, in collaboration with the Obsolete Property Rehabilitation Act (OPRA). The use of OPRA will provide a tax break for the project, allowing for upfront costs to be covered. The total amount of taxes to be abated over 12 years is estimated to be $393,946.
The renovation of the building will involve updating HVAC, electrical, and plumbing systems, as well as extensive interior and exterior work. This project will breathe new life into a building that has been vacant and neglected for 12 years, making it the first in the city to utilize OPRA as an economic development tool.
Treystar, the property owner and developer, purchased the building in April 2022, and it has become part of their property portfolio within the Haymarket District. The Haymarket District includes other notable buildings such as the Monroe Building, the Haymarket Building, and Main Street East building, as well as the Haymarket Plaza along Michigan Avenue.
Terry Patterson, a partner at Treystar, expressed excitement about bringing Barrio Tacos + Tequila + Whiskey to downtown Kalamazoo and the Haymarket District. The vibrant energy and concept of Barrio align well with the efforts to develop and operate the Haymarket Plaza.
