In the past decade, Chef Mario Carbone has gained notoriety for his exquisite Italian-American cuisine and his ability to attract celebrities to his restaurant. The Carbone team realized that they needed a vegetarian-friendly option that would cater to their customers’ preferences without requiring alterations to the dishes. Thus, the spicy vodka sauce over rigatoni was born. What’s even better is that the jarred sauce is vegan-friendly, much to the delight of plant-based eaters all over the country.

Chef Carbone revealed that what sets this sauce apart is its lack of a dairy component. Rather than using fresh dairy, which is unstable and cannot be jarred, Carbone opted for omitting the dairy altogether from his sauce. This allows home cooks to add their own cream or milk, personalizing their culinary experience. “All you have to do is bring your sauce up to a simmer,” explained Carbone. “One jar of sauce, two cups of heavy cream, and two tablespoons of butter… It’s really that simple. We kind of did the work for you, I guess.” For those who prefer a vegan twist, full-fat oat milk and dairy-free butter substitutes can be used instead of heavy cream and butter.

But don’t limit yourself to just using this sauce with rigatoni! Chef Carbone encourages experimenting with different dishes. “You could certainly use this base sauce for lots of things,” he said. “I crack a couple eggs in it, and I make shakshuka in the morning. Abnormal for an Italian household.” So, let your culinary creativity run wild!
