Embracing the DIY ethos, the distillery uses the dead plant matter accumulated on their farm to create their own peat. This alternative method involves pressing the plant matter into bread pans and dehydrating it, producing a sustainable source of smoke for their barley. Taking this resourcefulness to the next level, Colby Frey and Master Distiller Russell Wedlake transformed an old grain silo into a smoker using a fireplace.
