At Topside in Newport Beach, this cocktail combines Lillet Blanc, Italicus liqueur, grapefruit juice, lemon, honey, and rosemary, finished with Scarpetta Prosecco. Chef-Partner Riley Huddleston notes that its bright profile and complexity invite enjoyment without relying on high-proof spirits.
